Vegetarian Red Lentil Sausage Rolls || Dunnebells online personal trainer

These Vegetarian Red Lentil Sausage Rolls are the healthy appetizers that you are looking to make, especially during the summer BBQ season (or any time of the year, for that matter). They are quick, tasty, and are pocket-friendly to make.

As an Australian, I miss sausage rolls pretty much every day. I believe that if you wrap anything in pastry, it’s going to be pretty good. But these Vegetarian Red Lentil Sausage rolls are next level.

The red lentils act as a great substitute for meat and they are nice and flavourful. 

Not only are the lentils a delicious substitute for meat, but in a 100 gram serving of lentils, you can find 27 grams of protein and 18 grams of dietary fibre! 

NOTE - When possible, prepare the lentils the day before so the mixture can chill overnight in the fridge.

Ingredients

  • 2 cups cooked red lentils

  • 2 large red bell peppers roasted and skin removed (don’t worry about removing it perfectly)

  • 3 cloves garlic

  • 2 teaspoons chopped fresh parsley

  • 1 1/2 teaspoons smoked paprika

  • Salt and pepper

  • 1 cup shredded mild cheddar cheese

  • 3/4 cup dried breadcrumbs

  • 300 grams frozen puff pastry thawed

  • 1 egg

  • 1-2 tablespoons water

 

Instructions

  1. Add cooked lentils, roasted red peppers, parsley, garlic, paprika, pepper and salt to your food processor or blender. 

  2. Process until smooth and ensure all ingredients are properly blended.

  3. Empty the contents into a bowl and mix in the breadcrumbs and shredded cheese. Manually, combine the ingredients using a wooden spoon until they are mixed. This forms the base of your sausage. 

  4. Split up the mixture into 3 or 4 uniform portions. Roll them into the shape of thin and long sausages. Make sure the length of the sausage matches that of the puff pastry sheet. 

  5. As you would do with meat sausages, cover each of the pieces in plastic wrap and refrigerate them overnight or for at least 2 hours.

  6. Once chilled, it is time to preheat your oven to 425 degrees Fahrenheit.

  7. Carefully unroll your puff pastry and cut them into 3 or 4 pieces to match the number of sausages. Gently wrap them around the sausages and ensure that the seams are on the underside of the rolls.

  8. You can slice the rolls into smaller pieces that are about 1 to 1.5 inches long.  Place them on a baking sheet lined with parchment paper. If you cut them into smaller pieces, the lentils will likely ooze out of the ends, but it’s not the worst thing in the world. You can always trim them after cooking.

  9. Cut a couple of vents on the top of the sausage rolls.

  10. You can also brush the rolls with egg wash. For this, mix in an egg with some water in a small bowl and beat them with a fork until it turns frothy.

  11. Bake at 425 degrees Fahrenheit for 20-23 minutes, or until the puff pastry turns a beautiful golden brown.

  12. Your red lentil sausage rolls are ready to be served!
