This is the best version of pineapple fried rice around. The sweet, juicy pieces of pineapple go so well with the savoury flavoured rice!

Thai-style sweet and spicy pineapple fried rice with red bell pepper, cashews and cilantro. This is a healthy and quick, #meatlessmonday weeknight dinner!

You can be like us and eat a giant bowl of this Thai Pineapple Fried Rice for dinner or it makes a great side dish if you are having a summer BBQ.

Before you start making this Thai Pineapple Fried Rice

A couple of quick notes: 

  1. This meal cooks quickly, I recommend getting everything prepped and cut before you start cooking.

  2. Chilled leftover rice works best in stir-fries because it doesn’t clump together, so cook the rice in advance if time allows.

Thai Pineapple Fried Rice

The recipe is for 2 adult-size portions, we like to eat lots of food - if you don’t have a large appetite I am surprised you are here, to be honest, but this will make 4 servings for you.

INGREDIENTS

  • 2 tablespoons coconut oil or quality vegetable oil, divided

  • 2 eggs, beaten with a dash of salt

  • 1 ½ cups chopped fresh pineapple or canned pineapple (drained)

  • 1 large red bell pepper, diced

  • ¾ cup chopped green onions (about ½ bunch)

  • 2 cloves garlic, pressed or minced

  • ½ cup unsalted cashews, chopped

  • 2 cups cooked and chilled brown rice, long-grain brown jasmine rice works best, but any rice will still taste good

  • 1 tablespoon reduced-sodium tamari or soy sauce

  • 1 small lime, halved

  • Salt, to taste

  • A handful of fresh cilantro leaves, for garnishing

INSTRUCTIONS

  1. Place a large non-stick frying pan on your stove with medium-high heat. After it heats up, pour in a teaspoon of oil. Add in the beaten eggs and stir lightly until they are scrambled. This might take any time from 30 seconds up to a minute. Transfer the eggs to a separate bowl/plate.

  2. Wipe out the pan with some paper towel. Add a tablespoon of oil to the pan. Once it heats up, add the pineapple and red pepper. Keep stirring until the pineapple is caramelized. It will take about 3-5 minutes for the liquid to evaporate and the pineapple to be caramelized. Mix in the green onion and garlic and keep stirring until the dish is fragrant. Empty the pan and pour that all of those ingredients on top of the eggs.

  3. Lower the heat to medium and add 2 teaspoons of oil to the pan. Add in the chopped cashews and stir until fragrant. The cooking of cashews shouldn’t take more than 30 seconds. Mix in the rice to the pan and stir to combine. Keep stirring occasionally until the rice heats up which should take about 3 minutes.

  4. Now, pour all of the contents of the bowl back into the pan and stir them together. You can break up the scrambled eggs using your spoon. Keep the heat on until the contents are warmed through and then turn off the stove. Add the tamari and stir. You can also squeeze in the juice of ½ lime over the dish and stir it in. Taste and adjust the seasoning with salt.

  5. Transfer the content of the pan into individual serving bowls. Slice the remaining lime into wedges and add to the bowls for garnish. You can also add some cilantro. You can add extra tamari at this time if you like.

To make it gluten-free, make sure you use soy sauce that is gluten-free certified.

If you wish to make it vegan, you can skip the eggs and jump to step 2. You can also add crispy baked tofu in step 4.
