Ingredients:
½ cup leek - diced

1 tbsp coconut oil

½ cup water

½ cup cauliflower - diced

½ cup kale - stem removed and chopped

1 tbsp greek yogurt (plain, non-fat)

6-8oz tilapia

Large pinch of black pepper

Optional: ½ cup cooked rice. Parsley for serving

Directions:

In a large pan over medium heat, melt coconut oil and fry the leek for a few minutes.

Add cauliflower, kale and water to pan. Boil this mixture for a few minutes. Kale should soften.

Make a space in the mixture and add the fish. Sprinkle pepper on top. Cook for a few minutes until it can be broken up and combined with the mixture. Add greek yogurt and stir in well. Cook until fish is done and vegetables are soft.

Serve on bed of brown rice and top with parsley. Enjoy!
