Best Ever Cocount Flour Bread

I have said it before, but I'll say it again: Coconut flour is SO hard to work with (especially when experimenting). You would think by now, after creating recipes like my vegan cinnamon rolls and coconut bliss chocolate protein pancakes, I would have a pretty good handle on making practically any baked good with coconut flour. However, this recipe still took me about 4 times to perfect. Our Blendtec which is the newest addition to our kitchen from the lovely Teresa Johnstone definitely had something to do with this coconut flour bread being deemed the "best ever" but don't worry if you don't have one!

This coconut flour bread is moist and has a nice sweetness to it making it adaptable for you to eat with anything and at anytime of day, including breakfast! 

The coconut flour bread recipe is:

INGREDIENTS:

- 6 large organic eggs

- 1/2 cup organic ghee*

- 2 Tbsp honey

- 1/2 tsp sea salt

- 3/4 cup coconut flour

WHAT TO DO:

  1. Preheat oven to 350 degrees.

  2. Blend all ingredients together in a food processor until smooth. If you don't have a food processor, you can just mix it really well!

  3. Pour into a parchment lined (or oiled) 8×5 loaf pan.

  4. Bake in oven for 40 minutes. Let cool before slicing.

Want to change things up: Consider replacing the ghee with coconut oil! This works really well and tastes delicious. If you want a fluffier bread, you could also try swapping half of the fat with applesauce or squash puree (I haven't tried this and cannot guarantee the results but what is the worst that can happen)?

Like most coconut flour recipes, this one does require more eggs than a recipe using any other type of flour. Think of coconut flour as a sponge. It freakishly absorbs the liquid but with the amount of eggs in this bread it could pass as "protein bread" based on the wonderful amount of protein in each slice.

I recommend consuming this bread warm out of the oven with a heaping spoonful of peanut butter. Hell, you can even dip the bread into the peanut butter. No judgement here! Love peanut butter as much as me? Check out this Peanut Butter Chicken Salad and get ready for your socks to be blown off.
