Zoats do not exactly sound like the most appealing thing. They don't even really sound like food, but the concept is simple and this recipe is the bomb dot com. 

Some Zoat recipes call for flax meal, protein powder, and nuts, but this simple zucchini & egg white mixture containing over 21 grams of protein will give you that kick start for your day! 

Ingredients:

1/2 cup oats 

1 cup shredded zucchini (I just use 1 medium sized)

1/2 cup almond milk (add extra water if required for runny oats)

1 egg white

Directions:

In a bowl, combine oats, grated zucchini, and almond milk. Heat in microwave on medium high for 3-4 minutes (time depends on if you are using quick oats, regular oats or oat bran). Add egg whites while stirring vigorously (arm workout, your welcome), to avoid the egg white from clumping together and cook for another 1-2 min.

Top with diced apple, cinnamon, chia seeds and a spoon of peanut butter.
