Melt in your mouth Healthy Lemon Loaf - Better Than Starbucks!

Have you ever tried the delicious lemon loaf from Starbucks? I am a huge fan of healthy treats like these black bean brownies but when I am at Starbucks I can’t say no to the buttery lemon packed loaf that isn’t greasy or sour at all.

So, instead of ordering 3 slices and feeling the shame from the barista I decided to try and replicate the Starbucks lemon loaf at home, adding in some healthier additions.

I went straight to the Starbucks website to look at the ingredients inside their lemon loaf. Not surprisingly, their lemon loaf is loaded with a ton of ingredients that nobody can pronounce. They don’t share the exact recipe, so it was time to start experimenting to create this healthy lemon loaf.

Whether you’ve tried the lemon loaf from Starbucks or not, you should do yourself a favour and make this melt in your mouth healthy lemon loaf. It is perfect for breakfast, a morning snack or even dessert after making one of my favourites, Chicken tomato zoodle Keto dinner.

1/4 cup greek yogurt

1/2 cup lemon juice

3 tbsp oil

1/2 tbsp vanilla

Lemon zest (1 lemon)

1 cup flour (Gluten-free flour can be used with 1/2 tsp xanthan)

1 tbsp baking powder

1/2 tsp baking soda  

Pinch of salt

1/2 cup sugar (or xylitol)

OPTIONAL GLAZE: 1/2 cup icing sugar + 1 tbsp lemon juice (more if needed)


Preheat oven to 350 F.

Grease an 8 x 5 pan.

Mix all wet ingredients together (first 5) in a medium sizes bowl and then in a separate bowl combine all the dry ingredients. Stir dry into wet. Do not over mix.

Pour into pan and bake for 25 minutes.

A toothpick should come out clean.

Let cool, then spread glaze on top and allow to harden as it cools.

Freezes well or keeps in the fridge up to 1 week.
