The words healthy, low carb and protein are rarely found in the same sentence and when they are, you do everything you can to speculate what the "catch" is. There is no catch here!

Seeing as I am taking a break from my beloved Casein, I experimented with a new mug cake recipe because I prefer to eat my protein than drink it. I also prefer to make it taste as sweet and delicious as possible, whilst staying on track with my meal plan! This gooey, chocolate protein mug cake has ticked all the boxes for me. I highly recommend you give it a go. Actually, I demand you stop everything you are doing and go make it! I promise you won't regret it.

Cook time: 30 seconds

Total time: 3:30

Ingredients:

1 scoop of ON Gold Standard Whey (double rich chocolate)

1 tablespoon cocoa powder

1 tsp baking powder

1-2 tablespoons of liquid egg whites

2 tablespoons of Unsweetened Vanilla Almond Milk 

1 tablespoon Wild Friends Peanut Butter

Directions:

Combine all ingredients in a bowl and whisk with fork until cake batter consistency. 

In a mug, spoon the Peanut Butter into the bottom and pour the mixture over the top.

Cover with plastic wrap and  microwave for about 30 seconds. Don't walk away, the cake fluffs up quickly!

Eat out of the mug or tip into a bowl and watch the gooey melted peanut butter drip for days. OH MY GOD. *DROOLING*

Top with fruit, shredded coconut OR eat by itself.
